The molasses is dark in colour and is known for its robust flavour. The majority of sucrose from the original juice of the sugar cane has been crystallised and removed. The calorific content of blackstrap molasses is mostly due to the small remaining sugar. Unlike highly refined sugars, it contains significant amounts of vitamins –B6 and minerals, including calcium, magnesium and iron.
